WThis is an easy take on a beverage found on a new drinks list. This is a large-volume premix that is packed full of essence of a holiday season, which makes it excellent for a holiday party. Save the extra syrup for morning drinks, sweets, or to mix more rounds of this cocktail.

The Bikini Cocktail

Yields 10 people

For the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Drink (yields 850ml, to serve 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Method

To prepare the Cordial: Place the listed ingredients in a pan, heat until it reaches a simmer, agitating so the sugar melts. Next, turn off the burner allowing it to cool down entirely. Pour to a sealable bottle, seal keeping it in the fridge, it can be stored for about a month.

To make Cocktail Base: Mix all the liquids into a big jug, let it rest for one hour, then strain best through a fine cloth, making it completely strained.

To serve: Measure 85ml of your cocktail base into your cocktail shaker filled with ice, gently stirring lightly for a minute to chill. Filter into a cold coupe glass or similar, top with some cranberries and complete it by giving it a brief mist of the essential oil over the top.
